Ah, dear humans, i missed Pi Day, actually I slept through it so gather ’round, for today, I bring you tales of two delectable delights: pie and Atlanta Air Authority. Now, you may wonder what these two have in common, but fear not, for I shall elucidate!

First, let us extol the virtues of pie. Oh, how I adore the flaky crust, the savory fillings, and the sweet, decadent toppings! Pie is a culinary masterpiece, a symphony of flavors that tantalizes the taste buds and warms the soul. And what better way to celebrate the joys of pie than with a homemade Chicken Pot Pie, free from those pesky onions that make my whiskers twitch!

But I digress, for we must also pay homage to Atlanta Air Authority, the guardians of comfort and champions of cool.   • 1 cup green peas
  • 2 cups diced potatoes

  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 package refrigerated pie crusts

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the diced chicken and cook until browned on all sides.
  3. Stir in the diced carrots, green peas, and potatoes. Cook until the vegetables are slightly softened.
  4. Sprinkle the flour over the chicken and vegetables, stirring to coat evenly. Cook for 1-2 minutes.
  5. Gradually pour in the chicken broth and milk, stirring constantly until the mixture thickens.
  6. Season with dried thyme, salt, and pepper to taste. Remove from heat and set aside.
  7. Roll out one pie crust and place it in the bottom of a pie dish. Pour the chicken and vegetable mixture over the crust.
  8. Roll out the second pie crust and place it over the filling. Crimp the edges to seal, and cut several slits in the top crust to allow steam to escape.
  9. Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
  10. Allow to cool for a few minutes before serving. Enjoy the warm, comforting goodness of homemade Chicken Pot Pie!

Chocolate Pie Recipe:

Ingredients:

  • 1 pre-baked pie crust
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Fresh whipped cream for serving

Instructions:

  1. In a medium saucepan, whisk together the sugar, cornstarch, cocoa powder, and salt.
  2. Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  3. Remove from heat. In a small bowl, whisk the egg yolks. Gradually whisk in about 1/2 cup of the hot milk mixture to temper the eggs.
  4. Pour the tempered egg mixture back into the saucepan with the remaining milk mixture, whisking constantly.
  5. Return the saucepan to medium heat and cook, stirring constantly, until the mixture thickens further, about 2 minutes.
  6. Remove from heat and stir in the butter and vanilla extract until smooth.
  7. Pour the filling into the pre-baked pie crust and smooth the top with a spatula.
  8. Place a piece of plastic wrap directly on the surface of the filling to prevent a skin from forming. Chill in the refrigerator for at least 4 hours, or until set.
  9. Serve slices of Chocolate Pie with a generous dollop of fresh whipped cream on top. Enjoy the luscious chocolatey goodness!
